Quality checking is a priority at every step of the process, from when the lobsters are first pulled onboard by local fishers, until they are delivered to the consumer. We have crafted a process that ensures safe and efficient catching, processing and international delivery of lobsters.
At the heart of our operation are our state-of-the-art facilities, designed to ensure that our lobsters arrive at their final destination in perfect condition.
Our network of landing depots, strategically located around the coastlines of New Zealand and Australia, are equipped to support regional fishing fleets. Here, our experienced staff receive and carefully swim lobsters until they are ready to be transported to our export holding facilities.
We take every precaution to ensure that our lobsters remain healthy and fresh during transportation. That’s why we use temperature-controlled trucks to collect the lobsters from our depots and transport them to our export holding facilities. This helps to minimize stress and keep the lobsters in optimal condition throughout the journey.

Attention to detail is essential throughout the supply chain. As the world’s largest supplier of Southern Rock Lobster, 100% specialised in this field, we constantly look to refine every detail of handling, to deliver the best.
Fishing - Experienced fishermen set out to sea before dawn, navigating through the untamed waters to reach their designated fishing spots. Once they arrive at their locations, they carefully check their catch pots, selecting only the healthiest and most robust adult lobsters. Any undersized or immature lobsters are gently released back into the ocean, ensuring the sustainability of the fishery for future generations. The day's catch is then held in seawater wells onboard the fishing vessel, preserving the quality and freshness of the lobsters until they reach the Wild Legend landing depot.
Receival – Our landing depots are licensed to land and record lobsters under New Zealand and Australia's Quota Management System. We maintain seawater tanks for holding and resting lobsters overnight or longer. In remote areas such as the Sounds of Fiordland National Park, the day’s catch can be collected by helicopter directly from the fishing boat, and airlifted direct to our facilities.
Transportation – Catches are collected from depots by our own fleet of temperature and humidity controlled trucks, and taken to the nearest export facility. Here the lobsters are swum again in seawater for 24-48 hours to rejuvenate them before being packed for export to international airports.
Export – Ready to begin their travels, our lobsters are packed carefully. Packaging includes woodwool to keep lobsters comfortable and prevent them from harming themselves and the others around them, as well as ice packs and insulation to maintain their preferred low-temperature range.
Arrival – on arrival, our live lobsters can be swum again in the tanks of wholesalers at live seafood markets, or transported directly to restaurants, hotels and supermarkets in a number of countries, especially China. Our frozen products arrive at the correct temperature ready for your freezer.
Point of sale – Lobsters are held again in live saltwater tanks in restaurants and supermarkets until selected by a diner or shopper, or ordered online for home delivery. Wild Legend is focused on supplying the best quality lobster all the way to the final consumer.
It’s in the pristine marine ecosystems of New Zealand and Australia that the lobsters grow slowly with a sweet and delicate flesh. They cannot be farmed: our legendary fishermen voyage rough seas to find the remote hiding spots of the wild lobsters, and return with perfect Wild Legends.
